This Chicken & Sweet Potato Curry is the perfect after work meal. And what’s best is you can cook a huge batch for the week ahead.

Preparation:

Finely slice shallot, garlic & red chilli. Fry over a medium heat in olive oil until softened, add turmeric & reduce the heat.

Chop Chicken thighs, Peel & chop sweet potato and set aside. Add coconut cream to the pan & make sure to scrape the bottom & sides of the pan.

Add the chicken and sweet potato and bring to a gentle Simmer. Once the chicken and sweet potato are cooked and the sauce has started to thicken, season with salt & lime juice. Then finish with fresh coriander before serving.

Ingredients:

– 2 Chicken Thighs, 1 Sweet Potato,
– 1 Shallot
– 2 Cloves Garlic,
– 1 Long Red Chilli,
– Table Spoon Turmeric Powder, 1 Lime,
– 1 Tin Coconut Cream,
– 1⁄2 Bunch Coriander

Trump claims Iran’s military largely neutralized; tensions rise with attacks threatening air travel and oil shipping.

President Trump says Iran’s military capability has been largely neutralised, including its navy and air force, as the conflict in the Middle East intensifies. Iranian attacks have threatened commercial air travel and oil shipping through the Strait of Hormuz, raising fears of wider economic fallout.

The U.S. Embassy in Riyadh has faced two attacks, while Gulf states worked to intercept further Iranian strikes. Officials report six U.S. troops killed and more than 700 deaths inside Iran as the exchange of fire escalates.
